An Easy way To Save Your Apples and be an Environmental Champion

Often in the autumn when Anders and I have delivered our CSA baskets we have driven through the backsides of peoples houses and past their gardens. We have always noticed the quantity of apples lying on the ground.

I suppose many people think that the apples no longer have any value, especially after the frost has gotten to them.

Actually these apples are perfect for making apple cider vinegar. The fermenting process has already begun in them, and you just have to encourage it.

If you do not have a garden, there are many trees with no owners and also apples like many other foods, get thrown away when they are still of value.

So making vinegar is not just something you get some lovely bottles of the essence of apple  in(or pear or other fruit) - It is also a step towards being an environmental champion.

Pablo´s day to cook, Karin saves the leftovers and lunch was so good!

Today was Pablo's (one of our volunteers) turn to cook I wandered into the kitchen in the other house to see what was cooking. 

Yesterdays pot of lentil soup  was on the kitchen table  as the volunteers were nibbling at it during the break, and there was enough left for maybe three people and we would be five. A peek in the fridge gave good results:

Potato and leek soup from yesterday, cooked chard in a dish and some macaroni. Pablo seems to emulate his namesake (Picasso) with a fondness for artistic presentation so we got out a lovely iron pot and started filling layers.

On the bottom went the lentil soup which now was now more like a stew. We mixed in the cooked chard which balanced in perfectly.

Next came the macaroni which had tasty  fried onions and fresh parsley in it.  Pablo made extra macaroni just in case and mixed it together with the other.

The potato soup was made into a béchamel sauce  with cheese adding to its lovely taste and it was the crowning glory to Pablo´s dish. Not many leftovers left from the leftovers.
